I’m going to be honest, I don’t do a lot of cooking but when I do 99 percent of what I make is basically vegetables. Because I am kind of uhhh, super lazy, I often resort to zapping my veges in the microwave, because ain’t nobody got to to wait for that water to boil.
While I always assumed that this method of cooking was basically stripping my vegetables of all of their nutrients, a new study has found that cooking vegetables in the microwave is actually the healthiest way to cook your veg! In fact, scientists have actually concluded that microwaving vegetables preserves the nutrients of the vegetables much more so than other methods of cooking.
Here’s why: The National Brassica Survey found that broccoli should be cooked for three to five minutes to maintain vital nutrients. The issue is that most people cook broccoli for up to 10 minutes on the stove, therefore destroying a powerful antioxidant called glucoraphanin that is so good for us.
Because microwaves allow you you to cook food for a shorter amount of time, at a lower heat, vital nutrients are preserved. In fact a Harvard Medical School report says that microwaving “keeps more vitamins and minerals than almost any other cooking method.” Hooray for the lazy girl method!
