Crumbly Caramel Butterscotch Slice

This is a great crumbly butterscotch slice recipe that makes for a decadent treat when you’re feeling a little naughty. From Laced With Sugaramazing Instagram food blogger, Jenny Ha found this recipe in an old children’s cookbook. The butterscotch sauce can be eaten with ice cream or even on its own! Doesn’t it look divine?

This one's not vegan, refined sugar free, dairy free, gluten free or raw but it's still delicious. Butterscotch/caramel filling sandwiched between a buttery and crumbly shortbread. Recipe is up on the blog 👌🏽👌🏽👌🏽 #butterscotchslice

butterscotch slice Butterscotch slice 1.jpgbutterscotch sliceCARAMEL BUTTERSCOTCH SLICEFor the base:150g butter, softened1/2 cup sugar1 large egg1 tsp vanilla extract1 cup self-raising flour1 cup all-purpose flourFor the filling:100g butter2 heaping tablespoons of golden syrup1 can (more or less) sweetened condensed milkSprinkle of saltPreheat oven to 180°C.To make the base combine the butter, sugar, egg and vanilla in a food processor. Process until light and fluffy.Add in the flours, then process until a dough forms.Take 3/4 of the mixture and press into a square baking tin lined with baking paper. Wrap the remaining dough in glad wrap and place in the refrigerator.For the filling, melt the butter in a pot, add the golden syrup and stir. Remove from heat and add condensed milk, mixing until all the liquids are incorporated.Pour the filling over the dough in the tin.Coarsely grate the remaining piece of dough on top of the filling.Bake for 30-45 minutes, until the crust is golden and the filling has browned.Let cool completely before cutting.
