Recipe: Gin And Tonic Popsicles

The sun is out, summer is on its way and the days are getting longer. As the weather heats up it’s inevitable that the gin and tonic will come out because seriously, what’s better than a G&T on a hot summer night?

If you’re sick of your regular old G&T (unlikely but just humour me here), this one is for you. Take your summer to the next level by turning your regular old G&T into a popsicle. Not only are these popsicles super easy to make, but you can also add in your favourite summer fruit such as strawberries or mango.

Get your popsicle moulds ready cause this is going to be your new summer staple.


  • 3 cups tonic
  • 50 ml gin
  • ¼ lime, juiced
  • Optional: ½ cup cucumber slices, blueberries, strawberries, mango etc.


  1. Mix together tonic, gin and lime juice.
  2. Place fruit or cucumber slices into popsicle moulds, then pour in tonic mix. Freeze overnight before serving.
